Nestled in Higashikawa, celebrated for its pristine water essential for producing superior spirits, Tankyu Distillery was four years in the making. Construction began in June.
Occupying an area of 1,834 square meters, the distillery's innovative process combines state-of-the-art technology with traditional methods. For example, the single-malt whisky production includes fermentation in temperature-controlled stainless steel fermenters and then in traditional Japanese wooden washbacks.
The distillery, which is on track to begin production of its first batches of gin and whisky early next year, is offering an exclusive Private Cask Program, in which connoisseurs can pick their own cask, as well as workshops on whisky production led by cofounder Kit Cheung.
