There is something reassuringly simple about a madeleine: butter, flour and a familiar shell-shaped silhouette, best enjoyed while still warm from the oven. At MADÉ, a new specialist boutique on Lyndhurst Terrace, that French classic has been given a subtle rethink.
Following a soft opening in August, the Central shop is now officially open, introducing custom-made molds, a lighter texture and a rotating menu that moves between French tradition and Hong Kong-inspired flavors.
The first clue to MADÉ’s approach appears in the display case. Its madeleines are presented shell-side up, drawing attention to the ridged pattern rather than the traditional hump usually associated with the pastry.
The flatter back is partly a result of the recipe, which incorporates almond powder and produces a smoother silhouette. For its grand opening, MADÉ has gone a step further by developing proprietary molds that create a fuller, plumper shell.
The redesigned shape is not simply cosmetic. By adjusting the depth and proportions of the mold, the bakery aims for more golden surface area on the outside while retaining a soft center — giving each bite a clearer contrast between lightly crisp edges and a pillowy crumb.
It is a small detail, but one that reflects the boutique’s broader philosophy: familiar enough to feel comforting, but considered enough to feel new.
A lighter approach to the French classic
Rather than producing the denser sponge sometimes associated with traditional madeleines, MADÉ rests its batter for 12 hours before baking.
The extended maturation allows its French butter, flour and other ingredients to come together gradually, resulting in a lighter texture.
Baking takes place in small batches throughout the day at an open-view atelier, allowing visitors to see the process as trays move in and out of the oven. The boutique does not carry its madeleines over to the following day, keeping the focus on pastries served as fresh as possible.
That immediacy also suits MADÉ’s location.
Tucked into Lyndhurst Terrace amid Central’s restaurants, offices and steady pedestrian traffic, the boutique is conceived less as a formal pâtisserie than a quick escape from the pace outside. Its concept centers on turning something as simple as a madeleine into a brief afternoon pause — whether eaten alone, taken back to the office or shared from a larger box.
“Having fallen in love with Hong Kong and its dynamic atmosphere over the years, bringing MADÉ here felt completely natural,” co-founders Marie and Jean-Charles said.
“Engineering our proprietary molds for the Grand Opening is our way of perfecting the craft, delivering a plumper signature bake with optimized crispness at the exact same price.”

From citrus to egg tart
The counter carries six flavors at any one time, keeping the selection relatively focused while allowing seasonal creations to come and go.
Core offerings include the Signature Madeleine and citrus-led Zest Appeal, while The Local Star looks closer to home, pairing the French cake with a smooth egg tart custard center.
For Mid-Autumn Festival, MADÉ has introduced Over the Moon, a limited-edition madeleine inspired by the color of the full moon. Mango runs through the sponge, with pieces of dried mango adding chewiness and a light dusting of coconut finishing the shell.
The combinations give the boutique room to experiment without moving too far away from the pastry at its center.
Madeleines are available in formats ranging from small pouches for an afternoon snack to larger boxes designed for sharing, reflecting the kind of easy gifting and office snacking that comes naturally in Central.
For MADÉ, however, the appeal is not about making the humble madeleine overly elaborate. Its proposition is considerably simpler: refine the shape, pay attention to texture, bake little and often — and give people a reason to stop for a few minutes before heading back into the city.
