The reimagined high tea concept centers on a selection of premium mini bagels in partnership with Bageliciouz. These come in rich cinnamon raisin and plain varieties, and are served with honey truffle cream cheese and rose petal jam. The marshmallow sunny side-up is served theatrically on a bed of dry ice, bringing guests both visual and edible delight.
This array of sweet and savory items also includes reimagined Hong Kong dishes created by upscale Chinese restaurant Fan Guan, offering an exclusive gourmet iteration of the swan puff with barbecue pork, as well as the glutinous rice cake with pumpkin, bird's nest and custard, with ingredients sourced from select local farmers.
To complete the teatime experience, a selection of new beverages has been concocted.
These inlcude 'Stone Slabs,' a striking East versus West cocktail that combines flavors of sesame and ginger with Tropical Island Rum and Mancino Bianco. A light, celebratory option for the afternoon would be the 'Nox,' infusing honey and bergamot with Champagne Brut, or the more fruity Muses, a refreshing blend of grapefruit, salted caramel and kumquat with a dash of Vodka.
The hong dou sha (red bean soup) offers a mocktail alternative to the afternoon Espresso, artfully adding red bean and tangerine undertones to the coffee for a one-of-a-kind creation.
The spring special tea set is priced at HK$768 for two, plus 10 percent.
Shop 008 and 008A, K11 Musea, Victoria Dockside, 18 Salisbury Road, Tsim Sha Tsui, Kowloon. Open daily from 10:00am to 10:00pm.
