This soup is the classic Italian home-style dish, Minestrone — a hearty, tomato-based soup packed with vegetables. Furthermore, the grandmother adds beans. Beans are rich in plant-based protein and dietary fiber, providing strong satiety and rich nutrition. Regular consumption of beans helps lower the risk of heart disease. Here is the detailed recipe for the grandmother's longevity soup:
Minestrone Soup Ingredients:
- 2 cups Carrots (chopped)
- 2 cups Celery (sliced into sticks)
- 2 Zucchinis (diced)
- 1 Onion (chopped)
- 3 cloves Garlic (minced)
- 1 can (approx. 425g) Roasted Tomatoes
- 1 can Canned Cannellini Beans or Red Kidney Beans (drained and rinsed)
- 2 cups Green Beans
- 4 cups Vegetable Stock or Chicken Stock
- 2 Bay Leaves
- 1/2 tbsp Dried Oregano
- 1/2 tbsp Dried Basil
- 1/2 cup Small Pasta (e.g., macaroni, shell pasta, orecchiette)
- 1 tsp Dried or Fresh Parsley
- Crushed Red Pepper Flakes (to taste)
- 1 tsp Sea Salt (or to taste)

Minestrone Soup Instructions:
- In a large pot, heat cooking oil over medium heat. Add the onion and a small pinch of salt, sauté for about 1 minute.
