At The Park Lane Hong Kong, afternoon tea is taking an unexpected detour into the world of perfume. Beginning this month, the hotel’s Ebb & Flow will present a new collaboration with the International Fragrance Association (IFA), inviting guests to explore how scent and flavor intertwine.
Rather than spotlighting brands, the experience leans into the idea that every aroma carries a memory — a journey recalled by a citrus note, a sweetness that lingers, a spice reminding someone of a place once visited. The exhibition-style tea set pairs culinary creations with fragrance profiles, weaving together two sensory languages that rarely meet at the table.
The partnership reflects a growing interest in how scent shapes emotional well-being. The IFA, which has in recent years focused on the therapeutic dimensions of fragrance, brings this perspective to the collaboration. Diners are encouraged to engage their senses with intention: to pause, inhale, taste, and interpret the narratives behind each pairing.
The menu begins with a bright Citrus Scallop Ceviche, followed by a Seared Duck Foie Gras on Ciabatta Toast — rich, warm, almost autumnal. A Pink Peppercorn Crusted Wagyu Beef Burger adds a playful nod to spice routes and travel lore, grounding the savory selection in a gentle sense of wanderlust.
The sweets follow the same thematic arc. A Bergamot Cream and Jasmine Panna Cotta blends silkiness with floral calm, while a Mandarin Jelly with Cardamom offers a sharper, more contemporary contrast. A Granny Smith Apple and Orange Blossom Custard Tart captures the freshness of orchard fruit, and a Matcha Mousse topped with Rose “Airplane” evokes a fleeting, cloud-like lightness. The Citrus and Verbena Scone is served simply with clotted cream and jam, but its fragrance-forward profile encourages slow appreciation.
A signature Scented Blossoms Tea anchors the whole journey — a blend of jasmine, dried rose, citrus, and honey that leans more poetic than perfumed. The hotel says the infusion is meant to evoke “a blooming journey across continents,” a suggestion that fits the quiet, contemplative tone of the experience.
The afternoon tea will run on weekends and public holidays until January 1, 2026. Guests may also take home a small fragrance experience kit offered by the IFA, extending the sensory exploration beyond the lounge.
