The three accused of murder are Choi's jobless ex-husband Alex Kwong Kong-chi, 28; retired former father-in-law Kwong Kau, 65; and former brother-in-law Anthony Kwong Kong-kit, 31, who was her driver.
They allegedly murdered the 28-year-old influencer in a Lung Mei Village house in Tai Po on February 21.
Choi's former mother-in-law Jenny Li Sui-heung, 63, was charged with perverting the course of justice for allegedly destroying evidence against herself on February 23.
The four were escorted to the court yesterday by 10 Correctional Services Department officers and appeared before acting principal magistrate Peony Wong Nga-yan. They appeared calm in the dock - Kwong Kau looking around and Li with her head down.
The prosecution said Choi was going to pick up her daughter from her ex-husband from school last Tuesday and went missing on the same day.
Police found parts of her body in a house in Lung Mei Po on Friday. Her legs were in a fridge and her skull in a soup pot with carrots.
No plea was taken. Only Li applied for bail but it was rejected.
The hearing was adjourned to May 8 for further investigation, including examining evidence and the defendants' phone records.
Police will continue to search for Choi's missing hands and torso at landfills today, sources said.
Police and Drainage Services Department officers searched the Tseung Kwan O Chinese Permanent Cemetery and Lung Mei Village for missing parts over the weekend.
The court was told that Choi's first husband, Alex Kwong, was involved in seven theft cases in 2015 but he jumped bail. The cases will be mentioned in District Court today.
The trial for the theft cases was scheduled to begin on November 19, 2015, but Kwong went missing in August 2015. The court issued an arrest warrant.
The 47-year-old mistress of Kwong Kau, Ng, a masseur who was arrested on Sunday, allegedly rented a HK$40,000 unit at The Arch in West Kowloon to harbor Alex Kwong before he was arrested on Saturday.
It is understood Ng is also known as "Yung Yung" and works at a massage parlor in Prince Edward and a spa center in Kowloon City. Sources said Ng met Kau six months ago.
A colleague of Ng at the Prince Edward parlor said police went there on Sunday afternoon looking for Ng.
Her coworker said: "Ng has a nice voice and is pretty, so she is popular among our customers. She has two sons who are in their late teens or 20s.
"A rich old man wanted Ng to be his mistress earlier, and she said she no longer needed to work."
Police arrested Ng in Tsim Sha Tsui for allegedly helping to rent the Tai Po village house where Choi was believed to be dismembered and a flat in Tsim Sha Tsui to harbor Alex Kwong. She is being detained for questioning.
Ng was escorted by police officers to her residence in Foo Tak Building in Wan Chai on Sunday. She was handcuffed and her head was covered with a black hood.
Officers searched her apartment for 15 minutes but did not seize any evidence.
Choi's former parents-in-law and Anthony Kwong were arrested on Friday, but Alex Kwong was on the run for a day before he was arrested at a Tung Chung pier on Saturday. He allegedly tried to flee by a speedboat and was found carrying HK$500,000 in cash and luxury watches worth HK$4 million.
Lung Mei Village residents said they will hold a ritual soon to appease Choi's soul.
