The Lounge at New World Millennium Hong Kong Hotel presents Premium Wine Flight – Winemakers from Hong Kong, a sommelier-curated trio of Champagne, white and red that traces Hong Kong-linked winemaking stories across three regions.
For HK$498 per person, guests will enjoy three tasting pours and an additional complimentary glass of their preferred wine. This price is subject to a 10 percent service charge.
By day, The Lounge is filled with natural light from its two-storey windows; by night, it becomes a chic wine destination anchored by Vin et Vin, the hotel’s showpiece cellar storing over 1,000 labels from both Old and New World.
Champagne — H. Billiot Fils Cuvée Marston Kam
In Hong Kong’s Champagne scene, Marston Kam is known for an uncompromising terroir-first approach. His journey began with a one-hectare Grand Cru purchase in Cramant in 2009, followed by planting roots in Ambonnay in 2012; he is now pursuing a bold “New Project” to challenge Ambonnay’s Pinot Noir identity by planting Chardonnay for a more powerful, rule-breaking Blanc de Blancs vision.
Over the years, Marston’s releases have evolved from a single flagship expression into a more personal portfolio shaped by long-term site decisions and patience.

White — Project 933 Chardonnay 2022 (Miyoshi, Hiroshima, Japan)
A Hong Kong-born idea brought to life in Japan, Project 933 is connected to Hong Kong sommelier Reeze Choi in collaboration with Vinoble Winery. The name “933” symbolises connection — the sum of Hong Kong (+852) and Japan (+81) — and the project aims to showcase Japanese wine as precise, layered, and internationally compelling.
What started as a shared idea between Hong Kong and Japan has grown into a tightly produced label that carries a consistent message year after year: Japanese wine can be serious, precise, and globally relevant. Each vintage continues the same story — refining style and identity rather than chasing volume.

Red — Sciara 980 metri Terre Siciliane IGT 2022 (Etna, Sicily, Italy)
Founded in 2014 by Hong Kong winemaker Stef Yim, Sciara (meaning “Lava Road”) captures Mount Etna through volcanic soils at around 980 metres. The cooler altitude helps shape a poised, mineral-driven Etna red with concentrated yet bright red-berry character and finely silky tannins.
Since its founding, Sciara has been built around a clear philosophy: let Etna’s altitude and volcanic soils speak, even if it means taking the harder path. The 980 metri label reflects that long-term commitment — a small-production wine shaped by place, time, and deliberate choices in the vineyard.

The Lounge is open daily from 11am until 12am. Guests can enjoy Afternoon Tea, served daily from 2.30pm to 5.30pm.
From Monday to Saturday evenings, the experience is complemented by live entertainment from 7.30pm to 11.30pm.
