Unkai Japanese Cuisine chef Oshitani Takaho shows off his amazing skills at the Sea Urchin Festival. The Aomori-born chef has hand-picked the seasonal purple sea urchin from Hokkaido and Chiba-ken for the menu, which includes simmered sea urchin (HK$480) and sea urchin fried rice (HK$280).
